You might not see yourself as a farmer, but a lot of the things that we grow in our homes and gardens can actually be utilized as food. The fact that bananas, tomatoes and violets can be devoured by humans might come as know surprise, but did you know that you can eat the banana tree flower from a banana tree or that carnations have a spicy, peppery taste? There are however many flowers in our homes and gardens that should not be eaten, because some are unhealthy while other are right out deadly. Begin by removing the outer layers of the banana flower weighing roughly 500 grams. Clean the flower and slice it thinly. Place the slices in a bowl and rub in 1 tablespoon of salt. Leave to rest for 15 minutes before you squeeze out the juices extracted by the salt. Rinse under cold water and squeeze until dry. Slice 1 medium large onion, chop 2 cloves of garlic, and dice 1 small tomato. Heat up 2 tablespoons of oil in a frying pan and cook onion slices and chopped garlic until they become golden brown. Add the diced tomato and cook for 3 minutes while stirring. Add the banana flower together with 2 tablespoons of vinegar and bring to a boil. Leave to simmer for 5 minutes, then add salt and pepper to taste. Continue to cook until the banana flower is tender and then stir in 250 ml of coconut milk. Remove from heat and serve.
